07 Dec Mediterranean Kale Salad
Did you ever just want to create something new to eat? Ideas often come to me as I am driving home from work. You can stick with things you know, like I knew I had garden kale in the fridge that needed to be eaten. So, I came up my Mediterranean Kale Salad. I chopped up a bunch of kale and added handfuls or spoonfuls of kalamata olives, artichoke hearts, capers, sun dried tomatoes, chopped red onion, and some marinated mushrooms. I dressed it with the juice of 1/2 lemon, a swirl of olive oil, balsamic vinegar and some white wine vinegar. All those ingredients hung out together and chilled for an hour or so and it was ready to eat. What masterpieces or disasters have you created?
